First I want to say that I hope all the wonderful mothers had an amazing day! Well i must say that i was completely and utterly overwhelmed this weekend! I got maybe 5-6 hours of sleep the ENTIRE weekend...why you ask...because i was BAKING! lol No, seriously I was. I had someone order 6 cupcake bouquets and my mother in law ordered a Coconut Cake from me. Although I've done the cupcake bouquets before, it's still an extremely time consuming process. I made over 4 dozen cupcakes and i have none left...and its not because i use them all....and its not because me and the hubby ate them all....its because I'm the worlds worse delivery person EVER lol. Normally I when i deliver something my hubby ALWAYS come with me so i can drive and he can hold on to whatever it is we are delivering. Well yesterday we parted ways early in the morning, and i was all alone trying to carry down 3 flights of stairs 2 boxes full of cupcake bouquets. I totally failed. I had to replace the cupcakes at least 7 times because no matter how close i got to keeping them perfect one or two would turn over causing the rest to do the same. It took me over 3 hours of trying to leave before i was actually able to get out of the house. After that i had to brave the brake happy Floridian drivers on I-95. Needless to say cupcakes went tumbling and i literally gave up. When i got to the restaurant to drop them off i was surprise when i saw very minimal damage was done. My customer thought that they looked perfect and in the end that's all that matters. Note to myself: Never go alone on deliveries from here on out.
Now the coconut cake i made was my first coconut cake ever. I was a bit worried about the final results. Found a coconut cake recipe online, and although it sounded great i made some changes to it and added a Didra twist. I substituted milk for coconut milk and added vanilla, almond and coconut extracts into the actual cake and frosting. I made a cream cheese frosting and covered it with sweetened coconut shreds. Since i cover the cake with the coconut shreds it makes it very difficult to decorate so i add some pretty yellow lilies just so it didn't look plain. I was very pleased with the final result and my mother in law was too. She said that everyone loved it and the only complaint was that it wasn't bigger lol.

She's a Beauty! Baby Shower Cake Completed!!!
Hello Folks!
So this weekend I completed the baby shower cake! It came out AMAZING if I may say so myself. The girl I made it for loved it as well...She sent out the pics before I could even get to that part. I have such a busy baking week ahead of me...I have to make one more cake for mothers day and also 5 cupcake bouquets! But throughout all the madness I'm so excited that people like my creations enough to purchase them.
